Mozzarella cheese

Mozzarella is a soft, fresh cheese that has been produced in southern Italy since ancient Roman times.
It is said that mozzarella was first made when cheese curds accidentally fell into a pail of hot water in a cheese factory near Naples and soon after the first pizza was made.

Ingredients :

2)you have to lukewarm it only so that you can dip you finger in it, turn off the flame.
3)now add 1/2cup of vinegar to it and stir well for about 15-20secs. Cover it with a lid and keep it on rest for about 20 minutes.
4)after removing the lid you will see Curd has formed, now drainoff it through a sieve in another vessel, squeeze the Curd in sieve gently.
5)put 1tbsp of salt in the remaining  liquid and mix it well, put it on gas and heat it, don't bring the liquid to boil.
6)after heating it turnoff gas. Now dip the squeezed Curd in hot water, take out and squeeze again, repeat the process 5times in order give it cheesey texture. During squeezing also stretch it, you will see a smooth texture on it.
7)now put it in cold water to cool it completely. Remove and squeeze gently. 8)now wrap tightly in a cling wrap and keep it in refrigerator for about two hours. 9)after two hours take it out and your mozzarella is ready.
